Thinking of Ellerslie, I was blessed to have Anne and Martin as my volunteer buddies for the first shift. They are lovely, fun people, both Presbyterian ministers, and they shared with me their tasty tomato soup recipe. Good move. The Husband made a batch of tomato soup tonight with our Amish Paste tomatoes and it was just as tasty as promised! I was so busy eating it I forgot to take a photo. But these fellas might be in the next batch…
Martin’s Tomato Soup
Ingredients
- 9lbs/4kg tomatoes
- 3lbs/1.5kg onions
- 1 cup sugar
- 1 dsp salt
- Pepper
- 1 tbs short grain rice
- Mint or mint flakes
Method
- Chop tomatoes & onions.
- Add other ingredients.
- Bring to boil.
- Simmer until well-cooked.
- Puree the mixture (you can wait until a bit cooler).
- If you want to dilute it, a bit of water is useful.
Freeze as much as you want in containers (a margarine container is just right for two adults).
But where is the recipe?! And why can’t I now get the smell of tomato soup out of my mind? I will most likely spend all night dreaming about it…
